Episode 1 - Pocket Pies
Pie is a tricky thing. Once you've made one and cut into it, you've got a small window of time to eat your pie before it goes bad. Wasting pie? Well, that's a crime!
These individual pies were inspired by my wife's father, who loves my wife's Strawberry Rhubarb Pie but who typically ends up not being able to eat the whole thing before it goes bad. So these pocket pies are the perfect solution for him as they freeze great!
The only unique piece of equipment here is the air fryer, which we used as it helps bake the pie all the way around. You could likely use a regular oven, but I'd suggest using a rack to cook it on to help bake the underside of the pie as well.
